What is the difference between SIMMER and boil?
A boil is a rolling, noisy surface at around one hundred degrees. A simmer sits just below it, moving gently, which keeps meat tender instead of tightening it.
Does a MARINATE make meat tender?
Mostly it flavours the surface. Acid and salt work only a few millimetres in, so long marinating changes taste far more than texture.
